PAPARDELLE: In Tuscany, specially in Chianti,in Siena,in Firenze is a typical type of pasta. Pappardelle is basically a large version of tagliatelle, and it's very unusual nt a find it on Tuscan trattoria menus. It is usually eaten with sauces made from game: a well known dish is Pappardelle sulla lepre (pappardelle on hare), pappardelle are also really good with wild boar or the more usual rabbit
